Happiness: Three Favorite Thanksgiving Dishes

Three things related to our word of the month…or three random things we thought of while we were shopping, driving, sleeping…well, you get the idea. The only thing we can guarantee is that Sherra thinks in threes and she insisted we do this on Thursday. She’s bossy like that.

    Because you really should have something chocolate on your menu and this cake needs to be refrigerated overnight which makes it great for Thanksgiving!

Mashed Potatoes
Stuffing

Just this week I was saying to my kids, “Should we try something new this year?” and they yelled back “NO!” They said we had to have shrimp cocktail, jello salad, and spinach dip. These are all great, and a family tradition, but what about turkey, stuffing, and pie?
Here are the kid’s favorites, and are included in our family cookbook:

Shrimp Cocktail
(Nana Greenall- a Greenall Family Thanksgiving Tradition)

2 12 oz. bottles of Del Monte seafood Cocktail sauce or S &W (better w/out horse radish)
¾ head chopped celery
Shrimp- small, cooked and shelled and de-veined
Lemon juice (use to rinse bottles w/ and pour in)
Mix and chill
Serve in small glass with lemon wedge and wheat thins.
Eat with little forks!

Layered Strawberry Jell-O Salad
(From the Kitchen of Cindy Cayton)

Crust: Crush 2 cups pretzels, combine with 3 tablespoons sugar and ¾ cup melted margarine. Press into 9 X 13 pan. Bake for 8 minutes at 400°. Cool.

Filling: Beat together one 8 oz. package cream cheese, softened, 1 cup sugar and one
8 oz. container cool whip. Spread over top of cooled crust sealing edges all around to prevent next layer form running onto crust.

Jell-o: Dissolve one 6 oz. package Strawberry jell-o in 2 cup boiling water. Add 2 small packages frozen strawberries thawed with juice. Chill this layer until partially set. Then pour over cream cheese layer. Refrigerate until serving.

Spinach Dip
(From Aunt Bonnie)
1 cup Mayonnaise
1 ½ cups sour cream
1 pk. (10 oz.) frozen chopped spinach, thawed and drained
1 can (8oz.) water chestnuts, drained, chopped
3 green onions, chopped

Stir all ingredients until well mixed. Cover and chill.
Makes 3 cups. Serve in hollowed out round sour dough bread. Use bread pieces for dipping. Also great as a veggie dip.

I struggle with the Big Holiday meals because they aren’t my favorite foods, but I do love the sweet potatoes with marshmallows and the green beans with bacon. I have to laugh at Ann L.’s “Layered Strawberry Jell-O Salad” because it’s “Raspberry Pretzel Salad” at our house and I made it once with strawberry jello and LOVED it, but I was the only one!! :-) We’re back to raspberry this year – oh well – at least we’ll all be together!

1. Zippy clam dip — cream cheese, clams, lemon juice, and a few other items. Pretty normal recipe but I always add horseradish. (hence the ‘zippy’!)
2. Brocolli with lemon, garlic and black olive sauce.
3. Make Ahead Mashed potatoes

Apple Yam Casserole (mostly because it reminds me of Thanksgiving at my Grandma’s house)

Homemade rolls

Mashed Potatoes and Gravy (it’s that comfort food!)
